My first diet: I called it the Hard Boiled Egg Diet.
I was 12 years old.

My sister’s wedding was coming up and she asked me to be one of her attendants. I jumped at the opportunity but then decided I was too fat and needed to lose weight. My version of a diet was to skip the usual after-dinner cookies. Instead, I ate a hard boiled egg. Little did I know I was low carb before it became a movement.

By having a hard boiled egg for dessert I cut my dessert calories by about 70%. I ‘dieted’ that way for a month. I lost a few pounds. Mostly I think the process just made me feel better about myself. My self confidence rose and I was happy walking down the aisle at the church.

Eggs have been vilified for years as a cholesterol producing, artery clogging food. These days all the new research shows eggs are good for you, including the yolk.

Buying eggs can be confusing, though. Do I want brown eggs? Do organic eggs really make a difference? Here’s a column put out by the good folks at Epicurious that solves the mysteries associated with all the labeling on egg cartons. I learned a few tidbits and I bet you will, too.
